Happy Hanukkah!
The best part about Hanukkah? Latkes.
And the best part about making latkes?
Only 2 main ingredients: potato and onion.

The only other things you need are eggs, matzo meal, and a food processor.
We like to serve them with lox to make them extra Jewish. We really just like any excuse to eat lox.
Traditionally you serve latkes with apple sauce or sour cream, but we opt for sour cream.
We also served them with some regular salmon, just to make it more of a complete meal.
Don’t forget chives or dill. And lemon!
